45 Minute Cheesy Smoked Chicken & Broccoli Rice Slice
The ultimate "get-more-veg-in" dinner that the kids will actually ask for! This 45-minute slice is packed with smoky chicken, tender broccoli, and fluffy rice, all held together in a golden, cheesy crust. It’s perfect for a fuss-free weeknight meal or sliced up cold for the school lunchbox the next day.
Ingredients
- 5 eggs
- 250 grams pack of microwavable long grain rice, or cooked rice
- 1 cup chopped broccoli I chop it small so that it cooks evenly
- 200 grams smoked chicken
- 1½ cups grated tasty cheese
- salt and pepper
Instructions

Follow the directions on the packet for the rice and microwave until hot. If using leftover cooked rice you don't need to heat it.

Preheat oven to 180°C fan bake. Grease and line a 26cm x 18cm pan with baking paper.

In a large bowl, whisk eggs and add smoked chicken, broccoli, rice and half of the cheese. Season well with salt and pepper and mix well.

Pour mixture into the pan, smooth out with a spoon and sprinkle remaining cheese over the top.

Bake for 25-35 minutes until just set. Leave to cool in the pan for 10 minutes. Remove and cut. Serve plain or with relish and a salad on the side.
