    Ingredients

    • 1½ cups flour
    • 2 tsp baking powder
    • ¼ cup white sugar
    • ¼ cup brown sugar
    • 125 grams butter melted
    • 1 large egg
    • ½ cup milk
    • pinch of salt
    • 1 tsp vanilla extract

    Sauce

    • 1 ¼ cup brown sugar
    • 2 tbsp golden syrup
    • 2 tbsp cornflour
    • 2 cups boiling water
    • 25 grams butter

    Instructions

    1. Preheat oven to 180C Fan Bake

    2. To make the pudding batter add all the dry ingredients to a large bowl, mix and make a well in the center, and add all the wet ingredients, whisk together to form a thick batter.

    3. Spread the pudding batter into a deep sided baking dish.

    4. In a large bowl, add the brown sugar, golden syrup, cornflour and butter. Pour over boiling water and mix until butter is melted, and the sugar is mostly dissolved.

    5. Carefully pour the hot sauce over the pudding batter and bake in the oven for 30-35min until the pudding is cooked through in the centre and is spongey and set

    6. Serve warm with vanilla ice cream or whipped cream

    Recipe Notes

    NOTES
    If you don’t have golden syrup you can swap this for maple syrup or honey.
    Add a pinch of cinnamon to the sauce for a lightly spiced version or a sprinkle of white chocolate chips through the batter is also fab. To change things up you can also add canned apple, pear or peaches in the bottom of you baking dish before you add the pudding batter for a fruit version.
