Ready in under 30 minutes, my Sausage pasta has lashings of parmesan cheese, lovely pork sausages and is so simple and delicious!
Jump to RecipeThis recipe was born out of necessity, these ingredients are things we usually have in the house, however my daughter doesn’t love sausages, but she does enjoy meatballs, boom, sausages taken out of their casings are suddenly meatballs and everyone is happy! I have served the sausage meatballs with thin angel hair pasta which cooks really quickly, and broccoli which I just add to the pasta to cook. Then we serve the pasta and sausage with sautéed onion and garlic and lots of herbs and parmesan. Simple is beautiful.
Ingredients:
- Broccoli
- Pasta, I have used Angel Hair Pasta
- Olive oil
- Pork Sausages
- Onion
- Garlic
- Parmesan
- Chopped herbs – I am using flatleaf parsley, basil would also be delicious.
- Salt and pepper
- Juice of a lemon
- Chilli flakes
How to make Sausage Pasta:
Cook pasta in boiling salted water as per packet directions. When the pasta has 2 minutes to go, add the broccoli. Once pasta and broccoli is cooked, drain and reserve ½ cup of pasta water. While the pasta is cooking, heat a large pan over a medium heat. Add olive oil, nip the end of the sausage casing, and push out small ‘meatballs’ of sausage into the pan. Fry until golden on each side. Remove from the pan and set aside.
To the pan add the onion, sauté until translucent, around 4 minutes. Add the garlic, cook for 1 minute, add sausage back to the pan. Add pasta, pasta water and broccoli to the pan. Mix well. Turn off the heat, add salt and pepper, parsley and parmesan. Stir well, serve with chilli flakes and extra olive oil and parmesan.

What can I use instead of broccoli? You can use frozen peas, green beans, zucchini, or sweetcorn.

- 1 head broccoli cut into florets, stem sliced
- 300 grams Pasta I have used Angel Hair Pasta
- 1 teaspoon Olive oil
- 6 pork Sausages
- 1 Onion diced
- 1 teaspoon Garlic minced (or 2 cloves)
- 1 cup grated parmesan
- 1 cup chopped herbs – I am using flatleaf parsley basil would also be delicious.
- Salt and pepper
To serve
- Extra olive oil the juice of a lemon, chilli flakes and parmesan
