Quick Pork & Noodles

On the table in 30 minutes these tasty Quick Pork Noodles will fast become a family favourite!

With just a handful of ingredients these Quick Pork Noodles are so easy to make, and the hoisin sauce and ginger give a beautiful aromatic, sweet and salty flavour. Very moorish! I add broccoli because we love broccoli in my family, but you could swap for green beans or snow peas.

What ingredients are in Quick Pork Noodles:

  • Thick rice noodles, dried noodles
  • Sesame oil, or peanut oil or neutral oil
  • Root Ginger or pre-prepared minced ginger
  • Pork mince, you could use beef or chicken mince
  • Hoisin Sauce
  • Chicken stock, or vegetable stock
  • Broccoli
  • Coriander leaves
  • Lemon wedges, optional, to serve
  • Chilli sauce, optional, to serve, I used siracha

How to make Quick Pork Noodles:

Cook rice noodles as per packet directions until tender. When they are 2 minutes from being cooked, add the broccoli. Once cooked, drain and run under cold water. Set aside.

Heat oil in a pan, add ginger and pork and cook, stirring occasionally, for around 5 minutes until pork is cooked through. Add hoisin sauce and chicken stock and cook for a couple of minutes, stirring occasionally. Add the noodles & broccoli. Stir to combine and take off the heat.

Add coriander and serve with lemon wedges and chilli sauce.

Common questions about Quick Pork Noodles:

I don’t like pork what else can I use?  You can use chicken or beef mince, or tofu would work too.

Substitutes for broccoli please? Snow peas, green peas, corn, green beans.

Wine match: I would serve a Pinot Gris or a Pinot Noir with the Quick Pork Noodles.

Quick Pork Noodles

  • 200 grams thick rice noodles
  • 1 teaspoon sesame oil
  • 1 thumb sized piece of ginger or 2 tablespoons minced ginger
  • 500 grams pork mince
  • 1/3 cup Hoisin Sauce
  • 1/3 cup chicken stock
  • 1 head of broccoli cut into bite size florets
  • 1/2 cup coriander leaves roughly chopped
  • To Serve
  • Lemon wedges
  • Chilli sauce
