Buffalo Chicken Wings with Blue Cheese Dip

Crispy oven baked chicken wings tossed in spicy buffalo sauce with a delicious blue cheese dip. My Buffalo Chicken Wings with Blue Cheese Dip are perfect for game day, a casual dinner or a delicious snack.

We have recently moved house and while we were packing I kept meals veeeery simple. There were lots of platters, toasted sandwiches and pasta bakes. I also made these epic Buffalo chicken wings which Hamish and I devoured.

I have seen American food bloggers use baking powder to get crispy chicken without frying and I was dying to try it out. The key points are, use baking powder NOT baking soda, use a rack for the chicken. Cook for 45 minutes, which is longer than normal.

This results in crispy chicken wings cooked in the oven! I am adding buffalo hot sauce with honey, and a blue cheese dipping sauce. However if you don’t like Blue cheese you can use a ranch dressing. Also when I am cooking for the kids as well I set some crispy wings aside and keep them plain and don’t add the sauce.

Ingredients:

  • chicken nibbles, (I prefer the ones that are cut into wings and drums)
  • baking powder (not baking soda)
  • salt
  • onion powder
  • garlic powder
  • buffalo hot sauce
  • melted butter
  • honey
  • sour cream
  • mayonnaise
  • garlic clove, minced
  • chopped flatleaf parsley (optional)
  • blue cheese, crumbled
  • Juice of ½ lemon

How to make Buffalo Chicken Wings:

Preheat oven to 200 degrees fan bake. Line an oven tray with baking paper or foil and cover with a baking rack. In a large bowl, add the chicken wings and pat dry with a paper towel. Add baking powder, salt, garlic and onion powders. Toss to coat the chicken. Place the wings on the rack in a single layer. Do not crowd or they will not go crispy.

Cook in the oven until golden brown and crispy, around 45 minutes. While the chicken is cooking, make the blue cheese dip by mixing all ingredients together. Taste and adjust seasoning with salt if needed. Refrigerate until ready to serve. 

When the chicken is nearly done, make the buffalo sauce by mixing the hot sauce, butter and honey together. Combine the crispy chicken wings with the buffalo sauce and toss to coat. Serve with blue cheese dip, and cucumber sticks.

Any time saving tips? If you are short on time, you can use the hot sauce straight from the bottle without adding butter and honey and use a store bought dip instead of making your own.

Wine match? Buffalo wings go beautifully with an ice cold beer! So give the wine a miss this time and let a lager cool your palate.

Ingredients

For the chicken

  • 1.5 kgs chicken nibbles (I prefer the ones that are cut into wings and drums)
  • 1 tablespoon of baking powder
  • 1 teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder

For the sauce

  • ½ cup buffalo hot sauce
  • 2 tablespoons melted butter
  • 1 tablespoon honey

Blue Cheese Dip

  • 2/3 cup sour cream
  • ½ cup mayonnaise
  • 1 garlic clove minced
  • 1 tablespoon chopped flatleaf parsley optional
  • 100 grams blue cheese crumbled
  • Juice of ½ lemon around 1 teaspoon

Recipe Notes

Alternatively, you can serve with store bought ranch sauce.
