Jump to RecipeWith just a handful of ingredients these Quick Pork Noodles are so easy to make, and the hoisin sauce and ginger give a beautiful aromatic, sweet and salty flavour. Very moorish! I add broccoli because we love broccoli in my family, but you could swap for green beans or snow peas.
What ingredients are in Quick Pork Noodles:
- Thick rice noodles, dried noodles
- Sesame oil, or peanut oil or neutral oil
- Root Ginger or pre-prepared minced ginger
- Pork mince, you could use beef or chicken mince
- Hoisin Sauce
- Chicken stock, or vegetable stock
- Broccoli
- Coriander leaves
- Lemon wedges, optional, to serve
- Chilli sauce, optional, to serve, I used siracha
How to make Quick Pork Noodles:
Cook rice noodles as per packet directions until tender. When they are 2 minutes from being cooked, add the broccoli. Once cooked, drain and run under cold water. Set aside.
Heat oil in a pan, add ginger and pork and cook, stirring occasionally, for around 5 minutes until pork is cooked through. Add hoisin sauce and chicken stock and cook for a couple of minutes, stirring occasionally. Add the noodles & broccoli. Stir to combine and take off the heat.
Add coriander and serve with lemon wedges and chilli sauce.

Common questions about Quick Pork Noodles:
I don’t like pork what else can I use? You can use chicken or beef mince, or tofu would work too.
Substitutes for broccoli please? Snow peas, green peas, corn, green beans.
Wine match: I would serve a Pinot Gris or a Pinot Noir with the Quick Pork Noodles.
