Greek Chicken Tray Bake

This Greek Chicken Tray Bake has chicken thighs, capsicum, red onion, olives, feta and cherry tomato’s all cooked with a zingy balsamic sauce. So tasty and ready in 45 minutes.

  • Ingredients in Greek Chicken Tray Bake
  • 1 Red onion
  • 1 lemon
  • 2 red capsicum
  • 6 chicken thighs
  • Salt and pepper
  • Herbs *optional – 4 sprigs of Thyme, 1 tablespoon chopped rosemary, 3 sprigs of oregano 
  • ¾ cup black olives
  • 200 grams feta, diced
  • 1 x180gram punnet Cherry tomatoes
  • Basil to garnish
  • Sauce
  • ¼ cup Olive oil
  • 3 cloves of garlic, finely chopped
  • 2 tablespoons balsamic vinegar
  • ½ teaspoon smoked paprika

Greek Chicken Tray Bake

Ingredients

  • 1 Red onion cut into 8 wedges
  • 1 lemon quartered
  • 2 red capsicum deseeded and cut into 6
  • 6 chicken thighs
  • Salt and pepper
  • Herbs *optional – 4 sprigs of Thyme 1 tablespoon chopped rosemary, 3 sprigs of oregano
  • ¾ cup black olives
  • 200 grams feta diced
  • 1 180 gram punnet Cherry tomatoes
  • Basil to garnish

Sauce

  • ¼ cup Olive oil
  • 3 cloves of garlic finely chopped
  • 2 tablespoons balsamic vinegar
  • ½ teaspoon smoked paprika

Instructions

  1. Preheat the oven to 200 degrees fan bake
  2. Take a large baking tray and add the onions, lemon, capsicum, herbs and chicken.
  3. In a bowl, add the olive oil, garlic, balsamic and paprika and whisk to combine.
  4. Pour half the dressing over the veggies and chicken.
  5. Season with salt and pepper and scatter over herbs if using. Toss well.
  6. Cook for 25 minutes.
  7. Remove from the oven and add the feta, olive, cherry tomatoes and the rest of the sauce.
  8. Place back in the oven for 10 minutes. Make sure the chicken is cooked through and remove from the oven. Scatter with basil.
  9. Serve with couscous, pasta, mashed potato or a green salad.
