Chicken & Corn Quesadilla

January 1, 2023 by themacphersondiaries Leave a Comment

Quesadillas are a staple in our house and this Chicken and Corn version is a favourite.

We always have wraps or tortillas in the pantry and these quesadillas have chicken, corn, cheese and Mexican seasoning (optional) which we usually have on hand too.

They are are so quick to make and the kids love them! I have served them with a salsa here to add some extra flavour and veggies.

Ingredients

– Cooked Chicken

– Grated cheese – I like using tasty

– Mexican Taco Seasoning *Optional

– Can Corn kernels

– Mozzarella cheese *optional

– Flour tortillas

– Oil for frying

– Avocado, diced

– Cherry Tomato, sliced

– Coriander, chopped

– Salt and pepper

– Juice of ½ a lemon, or ½ teaspoon lemon juice

I hope you love this one as much as we do, and Chicken Pitas with Tzatziki is another one of my most popular chicken recipes.

Onto my recipe for Chicken and Corn Quesadilla.
