Quesadillas are a staple in our house and this Chicken and Corn version is a favourite.

We always have wraps or tortillas in the pantry and these quesadillas have chicken, corn, cheese and Mexican seasoning (optional) which we usually have on hand too.

They are are so quick to make and the kids love them! I have served them with a salsa here to add some extra flavour and veggies.

Ingredients
– Cooked Chicken
– Grated cheese – I like using tasty
– Mexican Taco Seasoning *Optional
– Can Corn kernels
– Mozzarella cheese *optional
– Flour tortillas
– Oil for frying
– Avocado, diced
– Cherry Tomato, sliced
– Coriander, chopped
– Salt and pepper
– Juice of ½ a lemon, or ½ teaspoon lemon juice

Onto my recipe for Chicken and Corn Quesadilla.
Chicken and Corn Quesadilla
Servings 10 quesadilla
Ingredients
- 500 grams Cooked Chicken
- 1 cup grated cheese – I like using tasty
- 35 grams / 3 tablespoons Mexican Taco Seasoning *Optional
- 1 Can Corn kernels – drained
- 1 cup mozzarella cheese *optional
- 10 Flour tortillas
- Oil for frying
Garnish
- 1 – 2 Avocado diced
- ½ punnet cherry Tomato sliced
- 2 tablespoons coriander chopped
- Salt and pepper
- Juice of ½ a lemon or ½ teaspoon lemon juice
Instructions

Mix the avocado, tomato and coriander together gently and season with salt and pepper and lemon juice. Set aside.

In a bowl add the chicken, corn and Mexican seasoning and mix well.

Take a tortilla on a board and spread some mixture over half the tortilla, top with a little mozzarella cheese and fold in half so you have a half circle shape.

Place your Biroix pan on the stove top on a medium heat.

Add ½ teaspoon of oil, once hot add a filled tortilla.

Cook until tortilla is golden and then flip and cook the other side.

Remove from the pan, slice into 3 and garnish with avocado. Repeat until all quesadillas are cooked.
