Chicken and Broccoli Pasta Bake

My Chicken and Broccoli Pasta Bake is creamy, tasty and so simple! With ingredients such as chicken, pasta and broccoli, it is a dish your whole family will love.

I am constantly on the quest to find meals that everyone in my family enjoys. I am pleased to say the Chicken Broccoli Pasta Bake is a winner! It has no scary ingredients for little people, and the combination tastes delicious so the adults love it too!

Ingredients:

  • Dried pasta, I used large shells  
  • Broccoli florets, I use the stalks too, just cut the outside off and slice.
  • Butter
  • Minced garlic
  • Chicken thigh or breast
  • Chicken stock
  • Paprika
  • Cream cheese
  • 1 ½ cup grated Tasty cheese
  • Salt and pepper

How to make Chicken and Broccoli Pasta Bake:

Preheat oven to 180 degrees fan bake

Cook pasta in salted boiling water as per packet directions until al dente, when the pasta has 2 more minutes to cook add the broccoli. Drain the pasta and broccoli and set aside. The broccoli will continue to cook in the oven, so it doesn’t need to be cooked through.  

Place your Biroix over a medium heat and add the butter and garlic, cook for 1 minute stirring constantly so the garlic doesn’t burn. Add the chicken and paprika, cook until chicken is golden and cooked through, around 6 minutes. Stir regularly.

Add the chicken stock and stir. Once it is hot add the cream cheese and stir until mostly melted. Add ¾ cup tasty cheese stir until melted. Turn off the heat.

Add the broccoli and pasta and mix well. Season with salt and pepper, taste and adjust seasoning if needed. Place the lid on the Biroix and transfer to the oven and cook for 15 minutes. Take the lid off and add the remaining ¾ cup of cheese. Cook for around 5 minutes or until cheese has melted.

What can I use instead of Chicken? Bacon would work really well or leave out the chicken to make it vegetarian.

What can I use instead of Broccoli? You can use green peas or carrots.

What wine shall I serve with Chicken and Broccoli Bake? A chardonnay would be perfect.

  • 450 grams chicken thigh sliced into 2 cm pieces
  • 1 cup Chicken stock
  • 1 teaspoon Paprika
  • 250 grams Cream cheese cut into a small dice
  • 1 ½ cup grated Tasty cheese
  • Salt and pepper
