Cook rice noodles as per packet directions until tender. When they are 2 minutes from being cooked, add the broccoli. Once cooked, drain and run under cold water. Set aside.

Heat oil in a pan, add ginger and pork and cook, stirring occasionally, for around 5 minutes until pork is cooked through.

Add hoisin sauce and chicken stock and cook for a couple of minutes, stirring occasionally. Add the noodles & broccoli. Stir to combine and take off the heat.

Add coriander and serve with lemon wedges and chilli sauce.
