Quick Pork Noodles

Servings 4

Ingredients

  • 200 grams thick rice noodles
  • 1 teaspoon sesame oil
  • 1 thumb sized piece of ginger or 2 tablespoons minced ginger
  • 500 grams pork mince
  • 1/3 cup Hoisin Sauce
  • 1/3 cup chicken stock
  • 1 head of broccoli cut into bite size florets
  • 1/2 cup coriander leaves roughly chopped
  • To Serve
  • Lemon wedges
  • Chilli sauce

Instructions

  1. Cook rice noodles as per packet directions until tender. When they are 2 minutes from being cooked, add the broccoli. Once cooked, drain and run under cold water. Set aside.
  2. Heat oil in a pan, add ginger and pork and cook, stirring occasionally, for around 5 minutes until pork is cooked through.
  3. Add hoisin sauce and chicken stock and cook for a couple of minutes, stirring occasionally. Add the noodles & broccoli. Stir to combine and take off the heat.
  4. Add coriander and serve with lemon wedges and chilli sauce.
