Sticky Chicken & Pineapple Kebabs with Rice and Fried Green Beans

I try my best to cook dishes that will please all 4 members of our family. Who knew it would be so difficult feeding toddlers and flexible adults! But I have a winner here team! The playful nature of skewers is often a success with children, must be something to do with getting their hands in their food?! In addition to the kids having fun the flavours pass the test for any adults at the table too!

I cut the chicken and the pineapple up quite small to make it easy for my children but feel free to leave these larger if it suits your dining companions. If you don’t have Kecap Manis (Sweet Soy Sauce) you can use extra soy and honey.

Sticky Chicken and Pineapple Kebabs with Rice and Fried Green Beans

Ingredients

  • 3-4 chicken thighs – skinned boned and cut into small pieces
  • 16 medium sized skewers – soaking in water so they don’t burn when cooking
  • 2 slices of fresh Pineapple – or you can use canned
  • 1.5 cups Jasmine rice
  • 300 grams green beans – topped and tailed
  • Pinch of salt
  • Oil for frying

Marinade

  • ½ teaspoon minced garlic
  • 3 Tablespoons Honey – runny is best but not essential
  • 3 tablespoons Soy sauce
  • 3 tablespoons Kecap manis – sweet soy
  • 1 tablespoon balsamic vinegar

Garnish – all optional

  • Handful of Coriander
  • Kewpie Mayonnaise
  • Sesame seeds
  • Chilli flakes or fresh

Instructions

  1. Make your marinade by mixing all the marinade ingredients together in a jar and shaking.
  2. Cut your pineapple similar size to your chicken
  3. Make your skewers by putting chicken and pineapple on to them. I did 4 pieces of chicken and 3 pineapple on each skewer.
  4. Once finished put them in a flat-ish container/bowl and pour over the marinade. Leave for as long as you have, 5 minutes is fine, 3 hours is great.
  5. Get your rice on to cook as per packet instructions.
  6. When ready to cook, get two pans on, one for the chicken and one for the beans. Add a good slosh of oil to each pan and bring to a medium heat.
  7. Add your chicken to one pan and your beans to the other.
  8. Season beans with salt.
  9. Let your chicken cook on all sides and you can pour over any leftover marinade half way through cooking. Don’t add it too early or it can burn.
  10. When ready to plate, start with rice then beans then skewers.
  11. Then add your garnishes if using.
  12. Sesame seeds, mayo, coriander and chilli.
  13. Serve and devour!
