We have been preserving a lot of fruit recently. The shelves in the garage are adorned with stewed apples, pears and peaches. So much so I have been weaving them into my cooking wherever possible.
I have also felt myself wanting to bake more. I think it was during lockdown having the kids home more, and now Hunter starting school. I love thinking that there is something sweet in his lunchbox made by me. It’s a little thing, but food is love.
So I give you, Oaty Fruit Slice! Perfect to use up stewed fruit, and great in a lunchbox!
SO EASY, you melt 3 ingredients together, add to 3 dry ingredients, and add a layer of stewed fruit in the middle. Bake. Slice. DONE!
We ate it warm with some yoghurt and extra stewed peaches, but once cooled and sliced it really is perfect to fill the baking tins.
It is SWEET so you can cut the pieces quite small.
*A note on the stewed fruit, you don’t want the fruit to be too “runny” or your slice will be too wet, I used the chunky parts of the fruit rather than the really runny parts and this was perfect.
Oaty Fruit Slice
Ingredients
- 2 tbsp golden syrup
- 225 g Butter
- ¾ cup sugar
- 1.5 c oats
- 1 ¼ cup self raising flour
- 1 tsp baking soda
- *1 cup stewed fruit I used apples & peaches
Instructions

Preheat oven 180

Grease and line a baking tin, I used a rectangle pie dish but a 20 x 28 square one would be ideal.

Melt the butter, sugar & syrup together in a pot over a low heat

In a large bowl, mix the flour, oats and baking soda

Once melted add the butter mix into the dry ingredients

Mix well

Place half your mix in your tin and press down with the back of your spoon

Take your *stewed fruit and distribute over the oat mix.

Cover with the rest of the mix, I found it easiest to do with my hands, then with a spoon to push together.

Bake for 30-35 mins until crisp and golden on top.

Cool & then slice into squares.

I made this slice this morning and it was so delicious, thank you for sharing the recipe. I used apple cooked with blackcurrants for the filling and the colour was amazing.
