I love to meal prep and these Greek Lunch Boxes have a simple Greek salad, hummus and pita. Tasty as! Perfect to make in bulk to meal prep.
The Greek salad has feta, tomatoes, cucumber, olives and basil if you have some on hand. Then I make a simple balsamic dressing to add when eating.
To make life easy I have used store bought hummus and pita breads, but by all means make your own if you like 🙂
Ingredients
- Hummus – Store bought
- Pita Bread
- Tomatoes, I used cherry tomatoes
- Cucumber
- Red onion
- Feta
- Olives, kalamata
- Basil, optional
- Olive oil
- Balsamic vinegar
- Salt & pepper

Onto my recipe for Greek Lunch Box
Greek Lunch Box
Servings 2
Ingredients
- 2 Pita Bread
- 200 grams Hummus
Salad
- ½ Cucumber diced
- ½ Red onion chunky diced
- 100 grams Feta diced
- 200 grams Tomato I used cherry tomatoes but large tomatoes are great too, cut into bite sized pieces
- ½ cup kalamata olives
- ¼ cup Basil leaves
Dressing
- 3 tablespoons Olive oil
- 1 tablespoon Balsamic vinegar
- Salt and pepper
Instructions

Take the red onion and place in a bowl and cover with water. Leave to soak for ten minutes. This is optional however I find it makes the onions nice to eat raw as it removes some of the astringency.

To a bowl add the cucumber, feta, tomato, olives and basil. Drain the red onion and add. Mix gently and transfer to your meal prep containers.

Make the dressing by adding olive oil and balsamic together and season with salt and pepper. Transfer to a small jar/container.

To assemble take your lunch container, add hummus, pita, Greek salad and dressing. When you go to eat, heat the pita and drizzle dressing over the salad.
