Caprese Pasta Salad

My Caprese Pasta Salad is simple to prepare and uses only a handful of ingredients and tastes delicious!

I first made this pasta salad for Christmas Day because I wanted something that looked fun and festive. With it’s pop’s of red, white and green this salad is sure to delight on the Christmas table. But it is just as fabulous all year round. We love it for work lunches and it’s great for a pot luck too.

What ingredients are in Caprese Pasta Salad:

  • Pasta, I have used bow ties but similar pasta works well like penne or macaroni  
  • Olive oil
  • Balsamic vinegar
  • Garlic 
  • Salt and pepper
  • Juice of half a lemon
  • Bocconcini mozzarella balls, or you can use a large mozzarella and slice it up
  • Basil
  • Cherry Tomatoes

How to make Caprese Pasta Salad:

Cook the pasta in your Biroix pot in salted boiling water as per packet instructions.

While the pasta is cooking, take a large bowl and add the olive oil, balsamic vinegar, garlic, salt and pepper, lemon juice, tomatoes & cheese, mix well.

Slice the basil leaves.

Once the pasta is cooked al dente, drain well and add back to the Biroix pot, tip in the tomato mixture and mix well. Add the basil and taste. Adjust seasoning if needed. Serve with extra balsamic on the side.

Common questions about Caprese Pasta Salad:

Can I make it in advance? You sure can, you can make it a day prior and store in the fridge.

What else can I add? Both Prosciutto and extra balsamic glaze are lovely additions.

What wine would suit this dish? Either a sauvignon Blanc or Pinot Gris would be perfect.

Caprese Pasta Salad

Ingredients

  • 250 grams pasta I have used bow ties
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 clove of garlic minced
  • Salt and pepper
  • Juice of half a lemon
  • 250 grams bocconcini mozzarella balls
  • ¼ cup basil or more if you are crazy for basil like me!
  • 400 grams Cherry Tomatoes cut in half
  • Extra balsamic vinegar to serve

Instructions

  1. Cook the pasta in your Biroix pot in salted boiling water as per packet instructions.
