My son has just started school and I am already looking for quick ways to fill his lunchbox, and send him to school with some home baking. These muffins are so easy and I make most of the process in the blender! It saves on time and dishes!
You can change up the flavours to suit your taste buds, and you can add less sugar if you like things on the less sweet side too.
If you aren’t keen on using your blender you can just mix the wet ingredients well in a bowl instead.
Banana Chocolate Chip Blender Muffins
Servings 12 muffins
Ingredients
- 2 very ripe bananas
- ¼ cup milk
- ¼ cup oil
- 1 egg
- 1 teaspoon vanilla
- 1 cup self raising flour
- ¼ cup sugar
- ½ cup chocolate chips
Instructions

Preheat oven to 180 fan bake

Grease a 12 capacity muffin tin, or use paper patty cups.

In a blender jug, add banana, milk, oil, egg & vanilla

Blend and pour into a medium sized bowl

Place a sieve over the bowl and sift in the flour

Without stirring, add the sugar & choc chips

Mix together, sparingly, don’t over mix.

Spoon into muffin tins

Cook for 16 – 20min until cooked through and golden.
