Passionfruit Mojito recipe

Ingredients

  • ½ cup sugar
  • 1 cup Mint leaves torn roughly
  • 1 cup lime juice
  • 350 ml passionfruit pulp 2 x 175ml cans or use fresh passionfruit pulp
  • 1 1/2 cup white rum
  • 3 cup soda water
  • Half a bag of ice

GARNISH

  • Mint sprigs
  • 1 Lime sliced
  • 1 Nectarine sliced

Instructions

  1. In your Biroix or a large bowl place the sugar and mint. Take a muddler or the end of a wooden spoon, and gently muddle with a splash of lime juice. You don’t need to go crazy muddling as the mint tastes lovely when it is still fresh and lively.

  2. Add the remaining lime juice and mix to combine.
  3. Add the rum, passionfruit pulp and soda water.
  4. Fill with ice and garnish with nectarine and lime slices.
  5. Serve straight away with lots of glasses and a large ladle.
  6. Such fun!

Recipe Notes
