Cook pasta in boiling salted water as per packet directions. When the pasta has 2 minutes to go, add the broccoli. Once pasta and broccoli is cooked, drain and reserve ½ cup of pasta water.

While the pasta is cooking, heat a large pan over a medium heat. Add olive oil, nip the end of the sausage casing, and push out small ‘meatballs’ of sausage into the pan.

Fry until golden on each side. Remove from the pan and set aside.

To the pan add the onion, sauté until translucent, around 4 minutes. Add the garlic, cook for 1 minute, add sausage back to the pan.

Add pasta, pasta water and broccoli to the pan. Mix well.

Turn off the heat, add salt and pepper, parsley and parmesan. Stir well, serve with chilli flakes and extra olive oil and parmesan.
