In a large bowl, add sausage meat, beef mince, onion, carrot, relish, 1 egg and season well. Now mix. I find mixing with my hands the easiest way to really mix it together.
In a small bowl, mix the remaining egg and the milk with a fork
Place one sheet of pastry on a clean bench, cut the pastry sheet half horizontally.
Split your sausage filling into 8. Spoon 1/8 of the mix along the middle of your pastry horizontally. Shape it into an even sausage shape. Brush one edge with a little milk and egg mix. Now roll the sausage roll up. Finishing with the seam side down. Cut into 4 (or 6) pieces.
Transfer to your baking tray.
Repeat, and once all the sausage rolls are done, brush them all with the egg and milk mix and sprinkle with sesame seeds.
Bake in the preheated oven until golden and cooked through, around 25-30 minutes.
Serve with extra Anathoth Farm Tomato Relish on the side for dipping.
