Ingredients in Sausage Gnocchi:
- Olive oil
- 6 chicken sausages – I have used chicken sausages but you can use any of your favourites, including beef or pork or vegetarian sausages
- White Onion
- Garlic
- Gnocchi – I use shelf-stable gnocchi, the kind you’ll find vacuum-sealed in the pasta aisle. This means you don’t have to refrigerate it
- Canned diced Italian tomatoes
- Green beans, alternatively you could use broccoli or carrots
- Basil leaves OR 1 teaspoon Italian dried herb mix OR Dried oregano
- Paprika
- Honey
- Cream, optional, it does give a lovely creamy flavour but is still delicious if left out
- Salt and pepper
- Grated cheese, mozzarella is great I also use Colby or tasty
How to make Sausage Gnocchi:
Take a large casserole style dish that can stay on the heat for an extended period of time. I use my 30 cm shallow casserole dish from Kit co. Heat the oil and add the sausages. For a few minutes until golden on all sides, once mostly cooked through remove from the pan and cut into chunky pieces. Browning before cutting them like this means the sausages stay together. Return them back to the pan with the onion and cook for a few more minutes until onions are translucent.
Add the garlic and cook for 1 minute, stirring so the garlic doesn’t burn. Add the gnocchi tomatoes, beans, herbs, paprika, honey and season with salt and pepper. Cook for around 5 minutes, stirring.
Preheat the grill to 200 degrees. Add the cream, if using, stir to combine. Remove a piece of gnocchi and taste it to make sure it is cooked. It will soft and with no grittyness in the middle. Once the gnocchi is cooked take off the heat and taste the sauce, adjust seasoning if needed, and finish with grated cheese and place under the grill. It is ready once the cheese is golden and bubbling.
