This is my version of the classic Melon, Prosciutto and Mozzarella salad. It is combo that works so beautifully together and I have served it with a lovely homemade dressing.
The fresh, sweet, melon flavour with the salty prosciutto and creamy mozzarella taste so fab together.
You can use the little bocconcini mozzarella or large balls of mozzarella. If you use the large balls you can tear them up and drape over the salad.
Ingredients
- red onion
- red wine vinegar
- white sugar
- Rock melon
- Cos lettuce leaves
- 2 Large mozzarella balls OR 1 punnet of small bocconcini balls
- prosciutto
- basil leaves to garnish
- runny honey
- whole grain mustard
- olive oil
- white vinegar
- Salt & pepper

Melon, Prosciutto and Mozzarella Salad
Ingredients
- ½ a red onion thinly sliced
- 2 tablespoon red wine vinegar
- 2 teaspoon white sugar
- 1 Rock melon peeled and sliced into wedges
- 60 grams Cos lettuce leaves
- 2 Large mozzarella balls OR 1 punnet of small bocconcini balls
- 100 grams prosciutto
- ¼ cup basil leaves to garnish
- Olive oil
Dressing
- 2 tablespoons runny honey
- 2 tablespoons whole grain mustard
- 2/3 cup olive oil
- 1/3 cup white vinegar
- Salt & pepper
Instructions

In a small bowl, add the red onion, red wine vinegar and white sugar. Mix and set aside.

Make dressing by adding all ingredients into a glass jar, shake, taste, and adjust seasoning if needed. Tip – if you honey isn’t runny pop it in the microwave for 5-10 seconds. Set aside.

Drain the vinegar off the red onions and discard.

To assemble, take a large serving plate, arrange the lettuce leaves on and then the melon, prosciutto and mozzarella. If using large mozzarella, tear them up with your hands and drape over the salad. Scatter over the red onion.

Drizzle the salad with the dressing and garnish with basil.

Serve.

This recipe makes a lot of dressing as it is delicious, and you can use it on so many things! Halve the recipe if you only want a smaller amount.
