This Cheesy Rice Slice with Ham & Corn is all about the kids. My kids favourite foods are simple, plain, and usually carbohydrate driven. So this dish is perfect.
You can use precooked rice, just use 250 grams as per the recipe.
To make this Cheesy Rice Slice with Ham & Corn, first grease and line a pan.
Then whisk eggs and add the rice, corn and ham with half the cheese and season.
Mix well and pour into your pan, sprinkle with more cheese and bake. Bobs your uncle!
I did freeze some and it thawed nicely but you need to heat it up after freezing, as opposed to eating it from the fridge or at room temperature.
The Cheesy Rice Slice is perfect in lunchboxes, or served with a big green salad for lunch or dinner.
Cheesy Rice Slice with Ham & Corn
Ingredients
- 5 Eggs
- 250 grams pack of microwavable long grain rice, or cooked rice
- 420 grams Can corn kernels, rinsed and drained
- 100 grams Ham, sliced
- 1 Cup Grated tasty cheese
- Salt & Pepper

Preheat oven to 180°C fan bake. Grease and line a 26 x 18 cm pan with baking paper.

In a large bowl, whisk eggs, add rice, corn, ham and half of the cheese to the egg mixture. Mix well. Season with salt and pepper.

Pour mixture into greased pan. Sprinkle remaining cheese over the top.

Bake for 25-35 minutes, until just set. Leave to cool in pan for 10 minutes. Remove and cut.

Serve plain for children, or with relish and a salad on the side.
