Prawn Stir Fry

Ingredients

  • 1 cup Prep Set Go Kumara Chunks
  • 1 cup Prep Set Go Sliced capsicum
  • 200 grams Prawns
  • 3 tbsp Cashew nuts
  • 1/2 head Broccoli, cut into florets  
  • 2 cloves Garlic, sliced
  • 1 tsp Minced Ginger
  • 1 tbsp Soy sauce
  • 1 tsp Brown sugar
  • 1 tbsp Hoisin sauce  
  • 1 tbsp Corn flour
  • 1 tsp Oil, for frying

Instructions

  1. Make sure you have all your elements ready to go as once you start cooking it wont take long.

  2. Take a wok or a fry pan and place on a med-high heat.

  3. Mix your corn flour with the soy sauce and set aside.

  4. Add your oil and the kumara and fry for a few minutes, stirring regularly, the kumara doesn’t need to be cooked right through, but does need a head start on the other vegetables.

  5. Add the broccoli and prawns and cook for a few minutes. Add capsicum, cashews, garlic and ginger. Still stirring regularly.

  6. Add the soy sauce/corn flour mixture, brown sugar and hoisin.

  7. Prawn stir fry is ready when all the elements are cooked and sauce tastes great! If it gets a little too hot and food starts sticking to the pan add a tablespoon or two of water.

  8. Serve with rice.
