Mozzarella & Persimmon Salad with Mandarin Vinaigrette

Ingredients

  • 100 grams Mozzarella balls
  • 1 Persimmon
  • 1 packet of rocket
  • ¼ Red onion
  • Dressing
  • ½ cup Olive oil
  • ¼ cup Mandarin juice
  • 1 teaspoon runny Honey
  • ½ teaspoon Salt
  • 3 teaspoons Red wine vinegar

Instructions

  1. Finely slice the red onion and soak in cold water for 10 mins, this is to reduce the astringency.
  2. Make the dressing by combining all the ingredients in a jar and shaking well.
  3. Take your salad greens, add the mozzarella, sliced persimmon, and drained red onion. Drizzle with dressing and serve

Recipe Notes

The dressing makes more than is needed for this salad, but you will not regret having more on hand for the next salad you whip up.
For a full lunch I serve warmed Pita on the side.
