Mango & White Chocolate Popsicles

In Summer we love having a delightful frozen treat waiting at home after a day by the river. These 3 ingredient popsicles are ridiculously delicious and so simple to prepare, and the white chocolate dip makes them feel a little special.

Ingredients

  • 3 Mangos
  • 1 ½ Tablespoons Icing sugar
  • 200 grams White chocolate

Instructions

  1. Blend the mango with the icing sugar and pour into your popsicle moulds
  2. Freeze for 6 hours or overnight.
  3. Once frozen, we are ready to dip in white chocolate.
  4. Place the white chocolate in a small heatproof bowl, I like using my small Pyrex jug, as you want the chocolate to come high up the sides of the vessel to get a high dip on your popsicle.
  5. Melt the white chocolate in the microwave at 30 second intervals, stirring in between intervals.
  6. Then take your popsicles from the freezer and dip into the melted chocolate
  7. Store on baking paper in the freezer until ready to serve.

Recipe Notes

My popsicle mould are 1/3 cup capacity.
If you prefer you can use canned mangos, or try the popsicles with fresh strawberries.
If you want a different look, instead of dipping you can drizzle the white chocolate over the popsicles.
