Quick Beef Satay with Cucumber Pickle & Roti

A quick & easy family friendly dish that you can tweak to suit your guests.

Featuring Pepper & Me Wok Sauce & Man Grind Salt Blend

Ingredients

Satay sauce

  • 1/2 c peanut butter
  • 3 T Pepper & Me Wok Sauce
  • 2 T Sugar or Honey
  • 1 T boiling water
  • 2 T coconut cream
  • Man Grind Salt

Beef Kebabs

  • 600 grams beef quick cooking cut thinly sliced
  • 2 Tablespoons Wok Sauce
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Honey

Cucumber pickle

  • 4 inch slice of cucumber sliced
  • 1 Tablespoon white vinegar
  • 1 teaspoon of sugar
  • Mint optional

prepare any garnish. I have used a wedge of lemon, coriander, salted peanuts, fresh sliced chili and crispy shallots

Instructions

  1. Mix all satay sauce ingredients together in a bowl and set aside

    Soak kebab sticks in water 

  2. Add all beef marinade ingredients together and marinate beef in the fridge until ready to put on skewers

  3. Add all cucmber pickle ingredients together and leave in the fridge until ready to serve

Cook beef kebabs in a pan on a medium heat

Cook your readymade roti in a pan

to assemble

  1. place your satay sauce in a ramekin and sprinkle with crushed peanuts.
  2. arrange lemon and coriander on the plate
  3. place roti on the plate and top with the beef kebabs, sprinkle with chili and crispy shallots
