To serve 4:

Base

  • 1 ½ cups white or brown rice

Pork Mince

  • 600g pork mince
  • 2 cloves garlic, finely chopped
  • 2 tbsp brown sugar
  • 1 tbsp lemon juice (or a little less, to taste)
  • 1 thumb-sized piece fresh ginger, grated (or 1 tbsp jarred ginger)
  • ½ tsp salt or a few drops of fish sauce
  • 2 tsp sesame oil or neutral oil
  • ½ red onion, finely diced
  • 1 cup fresh coriander (stalks and leaves), chopped chunky

Toppings

  • 4 eggs, fried
  • Optional: extra coriander, sweet chilli or hot sauce for garnish

Time-Saving Tips

  • Marinate the pork up to 24 hours in advance for even more flavour.
  • Cook rice ahead of time and reheat just before serving.

Budget-Friendly Swaps

  • Skip fresh herbs if needed – the dish still packs plenty of flavour.

Vietnamese Pork Bowls

Gingery, herby, pork mince served over rice, with a fried egg and chilli sauce, divine!

Ingredients

  • 1½ cups rice white or brown

For the pork mince

  • 2 cloves of garlic finely chopped
  • 2 tbsp brown sugars
  • 1 tbsp lemon juice
  • 1 large thumb sized piece of ginger - minced
  • ½ teaspoon salt or a few drops of fish sauce
  • 600 grams pork mince
  • 2 teaspoon sesame oil
  • ½ red onion finely sliced
  • 1 cup fresh coriander stalks chopped chunky

Toppings

  • 4 eggs
  • ½ cup coriander chopped
  • sweet chilli sauce or hot sauce

Instructions

  1. Cook rice as per packet directions.

  2. In a bowl add garlic, brown sugar, lemon juice, ginger, and salt/fish sauce. Mix to combine, then add mince and mix well.

  3. In a pan over a medium heat add the 1 teaspoon of oil, when hot, add the mince fry until golden.

  4. Add red onion and turn off the heat. Mix to combine. Add the coriander.

  5. Taste and adjust seasoning using sugar or salt/fish sauce if needed.

  6. Take a non stick pan, over a medium – high heat, add the remaining 1 teaspoon of oil, when hot, crack in the eggs, fry until cooked to your liking.

  7. To assemble, take a bowl and add a bed of rice, top with pork, then the egg.

  8. Top with coriander and chilli sauce if using.

Recipe Notes

TIME SAVING NOTES
Make the mince marinade up to 24 hours in advance.
Cook rice in advance and reheat when using.

BUDGET NOTES
Leave out all fresh herbs.
You can use beef, chicken or lamb mince if more cost effective.

PROTEIN CHANGES
You can use beef, chicken or lamb mince. Or use finely chopped mushrooms to make it vegetarian, and other vegetables like corn, carrot or zucchini finely chopped or grated.

NOTES
My kids aren’t big on onion or herbs through things, so I take out some of the mince out and then add the red onion and coriander to the adult portion.
I love adding some chilli through this recipe for adults too, but I do this through adding hot sauce or chilli oil at the end.
I love serving this dish with steamed Asian greens and hoisin or oyster sauce. But steamed carrots, corn or broccoli go well too.
