Ingredients
- 2 tablespoons oil, I use canola or vegetable oil
- 2 teaspoons ground cumin
- 1 teaspoon paprika
- 2 tablespoons lemon or lime juice
- 400 grams steak, rump, flank or sirloin. Trimmed
- and sliced into ½ cm slices
- 2 Red onions, sliced
- 2 capsicums, I like one yellow and one red,
- seeds removed and sliced thinly.
- ¼ cup chopped coriander
- Salt & pepper
To serve - 8 Flour tortillas
- 2 Avocados, diced
- ½ cup Sour cream
- Hot Chilli sauce
- Lemon or lime wedges *optional

Onto my recipe for Steak Fajitas
Steak Fajitas
A simple dish where everyone can dig in and make their own steak fajitas. Flavoured with Mexican spices and served with tacos it is bound to be a winner in your house.
Ingredients
- 2 tbsp oil I use canola or vegetable oil
- 2 tsp ground cumin
- 1 tsp paprika
- 2 tbsps lemon or lime juice
- 400 grams steak rump, flank or sirloin. Trimmed and sliced into ½cm slices.
- 2 red onions sliced
- 2 capsicums I like one yellow and one red seeds removed and sliced thinly.
- ¼ cup fresh coriander chopped
- salt and pepper
To serve
- 8 flour tortillas
- 2 avocados diced
- ½ cup sour cream
- hot chilli sauce
- lemon or lime wedges
Instructions

Marinate the steak by taking a bowl and adding 1 tablespoon of oil, cumin, paprika, lemon/lime juice and steak. Season well, mix, and set aside to marinate while you prepare the other elements.

Heat a large frypan over a medium-high heat. Add 1 tablespoon of oil and once hot, add the capsicum and onion. Season well and cook for around 4-6 minutes, stirring regularly, until cooked through and softened. Remove from the pan and set aside.

In the same pan, add half the steak. Cook, stirring regularly, until browned and cooked to your liking, around 4-5 minutes.

Remove from the pan and cook the rest of the steak. Once cooked, add all the capsicum and steak back to the pan and cook for 30 seconds so that everything is lovely and hot.

Take off the heat and add the coriander. Taste and adjust seasoning if needed by adding more salt and pepper.

Warm the tortillas either in the microwave or in a pan, and fill with the steak mix, diced avocado, sour cream and hot sauce. Serve with lemon/lime wedges on the side.
Recipe Notes
TIME SAVING NOTES
Marinate Steak: You can marinate the steak in the morning or during the day, just LEAVE OUT the lemon/lime juice and add this when you start cooking in the evening.
Prep Veg: You can slice the capsicum in the morning or during the day.
BUDGET NOTES
Steak can be pricey but sliced like this a little goes a long way and you can often find beef on special. I find rump steak is often a cost effective cut.
You can use frozen capsicum for this if it is more cost effective, thaw out before frying.
PROTEIN CHANGES
Swap beef for chicken: You can swap out the beef for chicken breast or thighs.
Swap beef to haloumi for vegetarian: To make it vegetarian you can use haloumi in this recipe. Slice it into fingers and fry.
NOTES
You can serve the fajita style beef mix with your favourite Mexican sides and if you prefer serve it over rice as a “bowl” instead of with tortillas
This is a lighter meal, you can add extras such as cheese, fresh tomato, rice and/or corn chips to eat with the fajitas if you have big eaters in your house.
