This Sausage & Apple Stew is the perfect combination of sweet, savoury, and hearty—ideal for cooler evenings when only comfort food will do. It’s a far cry from the devilled sausages of your childhood, and just might become a new family favourite.

With tender pork sausages, soft caramelised apples, and a rich, flavour-packed gravy, this easy one-pan dinner is simple enough for weeknights but satisfying enough to serve to guests. Plus, it’s ready in just 40 minutes from start to finish.

Sausage & Apple Stew

Ingredients

  • 1 tbsp neutral oil (canola)
  • 1 onion, sliced
  • 8 pork sausages about 650g, not precooked sausages
  • 1 tbsp balsamic vinegar
  • 1 tbsp BBQ sauce
  • 1 tbsp soy sauce
  • 1 tbsp tomato sauce
  • 1 tbsp brown sugar
  • 1 tbsp flour
  • 2 cups chicken stock (or water)
  • 1 large apple peeled and cut into 1/2 cm slices

Instructions

  1. Place a heavy based pan over a medium heat and add the oil, once hot, add the onion, cook, stirring occasionally, until translucent, around 4 minutes.

  2. Add the sausages to the pan and cook until browned on all sides.

  3. In a bowl, add the balsamic vinegar, BBQ sauce, soy sauce, tomato paste, brown sugar and flour. Heat the stock (or boil the water) and slowly add the stock/water to the bowl, whisking while adding.

  4. Add the gravy to the pan with the sausages. Place a lid on the pan and simmer until the gravy has thickened, around 10 minutes.

  5. Add the apple slices, and place the lid on the pan, simmer for another 10-15 minutes until sausages are cooked through.

  6. Serve with mashed potato and steamed greens.

You can make this dish in advance and reheat when serving.

PROTEIN CHANGES
You can use any sausages you like, chicken, lamb, beef or vegetarian.

NOTES
This dish pairs so nicely with mashed potato as it has lots of lovely gravy.
