Sausage & Apple Stew
Ingredients
- 1 tbsp neutral oil (canola)
- 1 onion, sliced
- 8 pork sausages about 650g, not precooked sausages
- 1 tbsp balsamic vinegar
- 1 tbsp BBQ sauce
- 1 tbsp soy sauce
- 1 tbsp tomato sauce
- 1 tbsp brown sugar
- 1 tbsp flour
- 2 cups chicken stock (or water)
- 1 large apple peeled and cut into 1/2 cm slices
Instructions

Place a heavy based pan over a medium heat and add the oil, once hot, add the onion, cook, stirring occasionally, until translucent, around 4 minutes.

Add the sausages to the pan and cook until browned on all sides.

In a bowl, add the balsamic vinegar, BBQ sauce, soy sauce, tomato paste, brown sugar and flour. Heat the stock (or boil the water) and slowly add the stock/water to the bowl, whisking while adding.

Add the gravy to the pan with the sausages. Place a lid on the pan and simmer until the gravy has thickened, around 10 minutes.

Add the apple slices, and place the lid on the pan, simmer for another 10-15 minutes until sausages are cooked through.

Serve with mashed potato and steamed greens.
