Ingredients

1 tablespoon of olive oil
3 Carrots, peeled and cut into large chunks
4 Potatoes, peeled and cut into chunks not bigger than the carrots, as potatoes take a long time to cook
2 medium Orange Kumara, peeled and cut into large chunks
8 pork sausages
2 red apples, cored and quartered
Salt and Pepper
2 tablespoons Fresh herbs *optional I use thyme and rosemary, chopped. Sage and oregano also perfect
2 tablespoons runny honey

Sausage & Apple Tray Bake

Cook Time 30 minutes
Servings 4 -6 people

Ingredients

  • 1 tbsp olive oil
  • 3 carrots peeled and cut into large chunks
  • 4 potatoes peeled and cut into chunks smaller than the carrots, as potatoes take longer to cook
  • 2 medium orange kumara peeled and cut into large chunks
  • 8 pork sausages
  • 2 red apples cored and quartered
  • salt and pepper
  • 2 tbsp fresh herbs (rosemary, oregano, thyme, sage) – optional
  • 2 tbsp runny honey

Instructions

  1. Preheat oven to 180 degrees fan bake

  2. Prick the sausages twice with a fork.

  3. Take a large tray and add the carrots, potatoes, kumara, sausages and apples.

  4. Drizzle with olive oil and season generously with salt and pepper

  5. After 30 minutes, give the tray a good stir and turn over the sausages.

  6. Scatter over the herbs and drizzle over the honey.

  7. Return to the oven and the tray bake is ready when golden and cooked through, around 15-30 minutes.

  8. Serve straight away with green peas.

Recipe Notes

TIME SAVING NOTES
You can prep most of the dish in the morning or the night prior. Simply peel and cut all the veg and add the sausages and vegetables to the pan. Cover and refrigerate. Note – add the oil, apple and seasoning when you are ready to cook.
Also sometimes you find bags of pre-prepared roasting vegetables in the vegetable section. Whilst not always the most cost effective they really do save on time so this may be a good option for some busy households.
BUDGET NOTES
Swap out the vegetables for those that are at a good price. You can use pumpkin, onions, Jerusalem artichoke or parsnips instead, or as well as, the selection I have suggested.
PROTEIN CHANGES
You can use whatever sausages you like, including vegetarian sausages. The one thing to note is that the cook times are based on a thick uncooked sausage so if using thin, or precooked sausages, you may need to remove them from the oven before the vegetables.
NOTES
We usually serve the tray bake with a bowl of green peas or steamed broccoli
You can swap the apples for pears depending on what is in season.
