25 Minute Sausage Gnocchi
This creamy sausage gnocchi is on the table in just 25 minutes and tastes like something from your favourite Italian restaurant. Pillowy gnocchi, herby sausage, and a rich tomato cream sauce all cooked in one pan — an easy, fuss-free weeknight dinner the whole family will ask for again and again.
Ingredients
- 1 tsp netural oil like canola
- 500 grams sausages - I am using beef but any will work
- 1 onion finely chopped
- 3 cloves garlic minced
- ⅓ cup chicken stock or white wine
- 1 can chopped tomatoes
- 1 cup cream
- 1 tsp sugar
- 1 tsp Italian herbs
- 500 grams gnocchi - dried
- ½ cup parmesan
- ¼ cup basil leaves
- salt and pepper
Instructions
-
Place a large pan (that has a lid) over a medium heat, add the oil and once hot, add the onion and push the sausage meat out of the casings and add to the pan.
-
Cook for around 8 minutes until sausage meat is lightly browned. Stirring occasionally and breaking up the meat with your spoon.
-
Add the garlic and cook for 1 minute, stirring so it doesn’t burn.
-
Add the chicken stock/wine and deglaze the pan, cook for 1 minute, stirring and scraping the bottom of the pan.
-
Add the tomatoes, cream, sugar, dried herbs and gnocchi. Season with salt and pepper.
-
Bring to a simmer, once bubbling, place a lid on the pan, and turn the heat to medium. Cook for around 5 minutes, stirring half way through.
-
Remove the lid, stir and cook for around 3 minutes (with the lid off) until gnocchi is cooked and sauce is nice and thick. Taste and season with salt and pepper.
-
Add the parmesan and stir through. Scatter with basil. Serve with a side salad.
