This Prawn stir fry is tasty, healthy and has a delicious sticky sauce that is mild enough for the whole family! This whole cook took under 15 minutes and I used the Prep Set Go vegetables from Countdown, however if you don’t this product on hand, you can simply use 2 cups of vegetables of your choice.
I find stir fry such a breeze to cook because you can use what you have on hand. I often use chicken or beef instead of the prawns and change up the sauces for a different flavour.
One tip for stir fries, is get all your prep ready to go before you start cooking, because you are cooking at a high temperature so you will end up overcooking or burning something if you are still chopping while you are cooking.
I love adding nuts and it is a great way to add some healthy fats to the meal. You can serve this prawn stir fry with rice or noodles.
Prawn Stir Fry
Ingredients
- 1 cup Prep Set Go Kumara Chunks
- 1 cup Prep Set Go Sliced capsicum
- 200 grams Prawns
- 3 tbsp Cashew nuts
- 1/2 head Broccoli, cut into florets
- 2 cloves Garlic, sliced
- 1 tsp Minced Ginger
- 1 tbsp Soy sauce
- 1 tsp Brown sugar
- 1 tbsp Hoisin sauce
- 1 tbsp Corn flour
- 1 tsp Oil, for frying
Instructions

Make sure you have all your elements ready to go as once you start cooking it wont take long.

Take a wok or a fry pan and place on a med-high heat.

Mix your corn flour with the soy sauce and set aside.

Add your oil and the kumara and fry for a few minutes, stirring regularly, the kumara doesn’t need to be cooked right through, but does need a head start on the other vegetables.

Add the broccoli and prawns and cook for a few minutes. Add capsicum, cashews, garlic and ginger. Still stirring regularly.

Add the soy sauce/corn flour mixture, brown sugar and hoisin.

Prawn stir fry is ready when all the elements are cooked and sauce tastes great! If it gets a little too hot and food starts sticking to the pan add a tablespoon or two of water.

Serve with rice.
