Prawn Fried Rice – Quick & Flavour-Packed Weeknight Dinner
If you’ve got leftover rice, you’re halfway to dinner! This easy prawn fried rice recipe is a fast, flexible and flavourful dish that’s perfect for busy nights. With juicy prawns, crispy bacon, fluffy egg, and loads of umami from a simple sauce, this dinner comes together in just 15 minutes.

Ingredients
For the Sauce
- 1 tablespoon oyster sauce
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
Main Ingredients
- 3 tablespoons vegetable oil (or canola oil)
- 2 eggs, beaten
- 4 rashers bacon, diced
- 3 cloves garlic, crushed
- 1 thumb-sized piece ginger, grated (or 1 tbsp jarred)
- 1 onion, finely diced
- 1 tablespoon Chinese cooking wine (or chicken stock)
- 1 teaspoon sugar
- 300g raw prawns (defrosted if using frozen)
- 1 cup frozen peas and corn
- 3–4 cups cooked rice (best if day-old and cold)
- 1 spring onion, sliced (for garnish)

Time-Saving Tips
- Use jarred garlic and ginger instead of fresh.
- Cook extra rice the night before and store in the fridge to save time.
Budget Tips
- Leave out bacon and/or prawns for a vegetarian version.
- Use frozen mixed veg or whatever is in your fridge.
Protein Variations
- Swap prawns for cooked chicken, sliced beef, or even tofu.

Notes
- Day-old rice is key! Freshly cooked rice will be too soft.
- If following the meal plan, cook extra rice with your Butter Chicken to save time for this recipe.
- 3 cups of uncooked rice = ~9 cups cooked. This recipe uses 4 cups.
- Store cooked rice in a sealed container in the fridge and use the next day for best results.

Prawn Fried Rice
Takeaways at home - yes please! You can not beat a tasty fried rice for the value factor and ability to please a crowd.
Ingredients
Sauce
- 1 tbsp oyster sauce
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 3 tbsp oil vegetable or canola
- 2 eggs beaten
- 4 rashers of bacon diced
- 3 cloves of garlic crushed
- 1 Thumb sized piece of ginger
- 1 onion finely diced
- 1 tbsp chinese cooking wine or use chicken stock instead
- 1 tsp sugar
- 300 grams raw prawns defrosted if using frozen
- 1 cup peas and corn frozen is fine
- 3-4 cups cooked rice day old rice stored in the fridge overnight
- 1 spring onion sliced
Instructions

In a small bowl, mix together the oyster sauce, soy sauce and sesame oil. Set aside. Take a wok, or large fry pan, over a medium heat and add the eggs, scramble until cooked and remove from the pan.

Add the bacon and cook until golden. Around 3 minutes. Remove from the pan and set aside. Pour off any excess bacon fat from the pan.

Add 2 tablespoons of oil and the ginger, garlic and onion and place on a high heat.

Cook, stirring, until golden, around 2 minutes. Add the Chinese cooking wine/stock and sugar and stir.

Add the prawns and stir fry until pink and cooked through on both sides around 90 seconds. Add the frozen peas and corn and cook off until the water has evaporated. Around 2 minutes.

Add the rice, sauce, egg and bacon. Stir fry until everything is hot and saucy! Around 2 minutes. Once combined turn off the heat, sprinkle with spring onions and serve.
Recipe Notes
TIME SAVING NOTES
Use garlic and ginger from a jar instead of fresh garlic.
BUDGET NOTES
Leave out the bacon and/or prawns and make it a vegetarian version.
PROTEIN CHANGES
Add cooked chicken, sliced beef, or any quick cooking vegetables like mushrooms, corn, beans zucchini etc
NOTES
If you are following the meal plan and cooking the 4 recipes from the first meal plan, cook extra rice when you cook your rice for Butter Chicken, to use in Prawn Fried Rice.
For my family we make 3 cups of (uncooked) rice, which makes around 9 cups of cooked rice. You use 4 cups of cooked rice in the fried rice recipe. You can adjust these amounts to your needs. When you store the rice make sure it is in a sealed container and you use it the next day. Fried rice is best made with day old rice not fresh rice.
