Easy Oven Baked Lamb Chops – A Family Favourite, Ready in 20 Minutes

Use your favourite mash recipe, or try adding a spoonful of cream cheese and a knob of butter for extra creaminess.

Oven Baked Lamb Chops

Ingredients

  • 12 lamb chops - three per person
  • ¼ cup tomato sauce
  • 2 tbsp red wine vinegar
  • 2 tbsp brown sugar
  • 1 tbsp olive oil
  • 1 tsp salt
  • ¼ cup water

To serve

  • parsley for garnish
  • mashed potatoes - see notes
  • steamed greens

Instructions

  1. Preheat the oven to 220 fan bake.

  2. Take an oven tray and place the chops in a single layer.

  3. Place a medium sized pot over a medium heat.

  4. Add the tomato sauce, red wine vinegar, brown sugar, olive oil, salt and water.

  5. Stir until the sugar dissolves.

  6. Simmer for a few minutes then pour over the chops.

  7. Place in the oven and cook for 15 – 20 minutes until browned and cooked to your preference.

  8. Serve with a sprinkle of parsley, mashed potato and steamed greens.

Recipe Notes

TIME SAVING NOTES
You can mix up the sauce ingredients up to 24 hours in advance and when you are ready, cook and pour over the chops.

PROTEIN CHANGES
You can use this sauce on chicken nibbles or drumsticks too.

For the mash: Peel and chop 1 kg potatoes and boil. Once cooked, drain well and mash, once smooth add 1 cup of grated cheese, 50 grams of butter, ¾ cup of milk or cream (or a combo) and season well with salt. Mix until smooth. Serve half with the chops and half for the chicken and leek pie topping on the meal plan.
