I adore adding fruit to salads, I think it adds interest and a pop of sweetness, plus you increase your vitamin intake too! This salad would make a perfect work lunch, really simple, absolutely delicious and has your protein & vitamins covered. Persimmons & Mandarins are a great source of Vitamin C which is perfect to strengthen our immune system at this time of year. If you would like to make the dish more substantial you can add some warm pita bread on the side.
This salad requires no cooking and you whip the Mandarin Dressing up in a jar, so easy!
Storage tips.
Store Persimmon at room temperature as they go soft more quickly in the fridge.
Keep Mandarins in the fridge as this slows the maturity process.
Mozzarella & Persimmon Salad with Mandarin Vinaigrette
Ingredients
- 100 grams Mozzarella balls
- 1 Persimmon
- 1 packet of rocket
- ¼ Red onion
- Dressing
- ½ cup Olive oil
- ¼ cup Mandarin juice
- 1 teaspoon runny Honey
- ½ teaspoon Salt
- 3 teaspoons Red wine vinegar
Instructions

Finely slice the red onion and soak in cold water for 10 mins, this is to reduce the astringency.

Make the dressing by combining all the ingredients in a jar and shaking well.

Take your salad greens, add the mozzarella, sliced persimmon, and drained red onion. Drizzle with dressing and serve

The dressing makes more than is needed for this salad, but you will not regret having more on hand for the next salad you whip up.
For a full lunch I serve warmed Pita on the side.
