Ingredients You’ll Need
To serve 4 hungry mouths:
- 4 boneless, skinless chicken thighs, sliced
- 400g udon noodles
- 1 broccoli, cut into small florets
- 1 zucchini, sliced
- 2 cups chicken stock
- 1 onion, peeled and sliced
- 2 tbsp soy sauce
- 2 tbsp hoisin sauce
- 1 tsp honey
- 1 tsp oil, for frying
Optional Garnishes:
- A handful of crushed cashews or leftover honey roasted peanuts from another dish (like our Haloumi Satay Bowl!)
- Fresh herbs – coriander is ideal, but mint or finely sliced makrut lime leaves are also delicious.

Chicken Udon Noodles
One of the easiest and most satisfying dishes, sloppy noodles and a divine sauce with chicken and vegetables.
Ingredients
- 4 chicken thighs skinless, sliced
- 400 grams udon noodles
- 1 broccoli cut into small florets
- 1 zucchine sliced
- 2 cups chicken stock
- 1 onion peeled and sliced
- 2 tbsp soy sauce
- 2 tbsp hoisin
- 1 tsp oil for frying
Garnish
- Handful Cashews crushed
- Handful of herbs Coriander, mint, makrut lime leaves finely sliced.
Instructions

Take a large pan and place on a medium heat, add oil and once hot, add the onion.

Saute until translucent, around 4 minutes. Add the chicken, broccoli, hoisin, soy sauce and honey. Cook, stirring occasionally, for a few minutes, until chicken is not fully cooked as it will continue to cook with other ingredients.

Add stock and bring to a simmer add zucchini and udon noodles. Let everything cook and bubble away for a few minutes.

Taste and adjust seasoning with honey or soy sauce if needed. Once you are happy with the flavours, and it is sloppy and delicious take off the heat

Top with herbs and nuts. Serve!
Recipe Notes
TIME SAVING NOTES
Slice chicken, broccoli, zucchini and onion in advance.
This dish reheats well so you can make the whole thing in advance and reheat when ready to serve.
BUDGET NOTES
You can use whatever vegetables are in season, just think about how long they take to cook. Cauliflower, carrots and kumara take longer than beans, corn and spinach for instance.
PROTEIN CHANGES
You can use slices of beef or prawns in this dish, or make it vegetarian by removing the chicken and adding a selection of other vegetables as mentioned above.
NOTES
This is a slurpy noodle dish. At home we call this food to eat with friends because it can get messy! I only add the herbs on the adults dishes Add sweet chilli sauce or siracha for a chilli hit too.
