Chicken 3 Minute Noodle Jar

My Chicken 3 Minute Noodle Jar makes work lunch a breeze! Layer all your ingredients and flavourings in a jar and then add boiling water at lunch time, stir well and devour.

Here is a work lunch that I know Hamish will be pumped about and it is mega simple. I am using OXO chicken stock as the base for this delicious Chicken noodle soup , so handy! Add chilli sauce, soy, edamame and greens, before adding chicken and noodles. Take this to work and when you’re ready to eat, fill with boiling water, wait for 3 minutes and lunch is served!

Ingredients:

  • Oxo chicken stock cube
  • Soy sauce
  • Sweet chilli sauce
  • Spring onion
  • Bok choy, or you can sub for any soft greens, broccoli, zuchinni, beans.
  • Frozen Edamade beans (podded)
  • Cooked Chicken (I am using shredded roast chicken breast)
  • Udon noodles
  • Garnish – Fresh red chilli, & coriander

How to make Chicken 3 Minute Noodle Jar:

In your jar, place your flavourings first – Crumbled Oxo stock cube, soy sauce, sweet chilli, & spring onion, mix to combine.

Then add the edamame and bok choy on top, then the chicken and the noodles. You are done! This goes to work, along with the garnish.

When you are ready to eat, top with boiling water, put the lid on loosely on the jar. Leave for 3 minutes, stir, garnish and eat!

Common questions about Chicken 3 Minute Noodle Jar :

What can I use instead of chicken? You could use leftover roast beef or lamb, or take a soft boiled egg in a separate container and add at the end. smoked salmon slices would also work well.

Can I use a different stock flavour? Absolutely, you can use vegetable stock to make it vegetarian too.

Ingredients

  • 1 Oxo chicken stock cube
  • 2 tbsp Soy sauce
  • 2 tbsp Sweet chilli sauce
  • 1 Spring onion white end finely sliced, green end cut chunky
  • 1 small bok choy washed and halved through the middle
  • ¼ cup Edamade
  • 150 grams Cooked Chicken I am using shredded roast chicken breast
  • 1 200 gram packet Udon noodles
  • Garnish – Fresh red chilli & coriander

Instructions

  1. In your jar, place your flavourings first – Crumbled Oxo stock cube, soy sauce, sweet chilli, & spring onion, mix to combine.

  2. Then add the edamame and bok choy on top, then the chicken and the noodles. You are done! This goes to work, along with the garnish.
  3. When you are ready to eat, top with boiling water, put the lid on loosely on the jar. Leave for 3 minutes, stir, garnish and eat!

Recipe Notes

Fresh ginger would also be delicious grated into the chicken noodles
Remember to let your jar come up to room temperature before adding the boiling water or it will crack.
I used a 3 cup capacity jar for this large serve size
Sub fresh chilli for chilli flakes or dried chilli
