Let’s be honest, at most social gatherings these days you will need to cater for different food intolerances. This week is Coeliac Awareness Week and raise awareness about coeliac/gluten intolerances, I’m sharing a GF food hack that saves you time.
I’ve teamed up with Countdown and used their ‘Free from Gluten’ Banana Bread Mix. I only added one extra ingredient to make this one pack into two different treats – a banana loaf AND cupcakes.
Instead of making intolerances a hassle, I try and find recipes and food items that make cooking for different dietary needs easy! Whether it’s making treats for kid’s birthday parties or having friends around, I always make an effort to have some gluten free options available.
Countdown makes this so easy by having a great range of quality Free from Gluten products at affordable prices. Countdown also stock a full range of lactose free and vegan/vegetarian food which is pretty cool if you ask me! And it was SO good when River was dairy free, which was for the first 2 years for her little life.

Banana Loaf & Banana Cupcakes
Ingredients
- 1 x Free From Gluten banana Bread Mix from Countdown
- 3 bananas
- 1/2 cup vegetable oil
- ½ cup water
- 2 eggs
- Loaf tin
- Paper patty cases
Instructions

Preheat the oven to 175 conventional/160 c fan forced

Grease and line your loaf tin

Put 6 patty cases into a muffin tin

Make the mix as per the instructions on the packet

When the mix is made, take half and put it into your loaf tin.

Peel one banana and cut through the middle lengthwise and place on top of the loaf. Push in a little to nestle into the mixture.

Fill the patty cases ¾ of the way with the mix. Take the last half of the banana and cut 6 round slices approx. ½ cm in width. Push this round into the top of the mixture.

Bake as per packet instructions
